The concept of sustainable development in general is based on three main pillars - environmental, social and economic. That is why we, in the context of sustainability, also take these three areas into account.
Taking the path of sustainability makes sense
One of the basic definitions of sustainable development is that it is “a development that meets the needs of present generations without compromising the ability to meet their needs for future generations”. We want our children to lead a happy and full life and that is why sustainability makes sense to us.
As well as being environmentally friendly, the social level is also important to us. We are interested in our employees, suppliers, customers or the local community. We know that we cannot do without them and their satisfaction. That is why we treat all of them fairly and with respect for their work. We strive to build quality long-term relationships with open and transparent communication, both towards customers, employees and suppliers.
Sustainable functioning model
It is not easy to find a sustainable model of functioning and it is not possible day to day. At the same time, this journey requires considerable investment in the form of time and energy. However, we believe that in the end it will all pay off. As a result, sustainable operation inherently works more efficiently. For example, because it does not waste resources and approaches the principles of the circular economy.
Support of local producers
From the very beginning, our main vision was to take as many raw materials as possible from local growers and producers, and we continue to do so. We are thus able to shorten our supply chains more and more and reduce the volume of transport. We like to support the local economy. We meet producers and farmers directly. This is the world that we want to support and develop within our catering.
Our green garden
We have revived the Battista Brickworks grounds with a herbal garden and next year we are going to further expand in this direction. We are also interested in the possibility of establishing compost and its further use. We also partially grow edible flowers, which we use in our catering.
Sustainability at events
We are also working on the concept of sustainable action, which we are constantly improving. The most important for the success of such an event is communication and understanding of the whole concept and its goals by all involved.
The main goal of such an event is a plastic-free event with minimal waste and maximum taste from raw materials from local suppliers. We encourage our guests not to throw away anything, and what they do not milk, to take home. To do this, they use ecologically degradable menu boxes. In addition, we encourage all those involved not to waste dishes and glasses unnecessarily. It is also possible to bring your own cup, which the guest uses throughout the event.
In terms of dishes, in our opinion, the best combination of the classic with environmentally degradable disposable is always the best. However, the emphasis is always on maximizing waste. Unfortunately, the current consumer society is moving very slowly towards the concept of sustainability, and as has already been said, everything cannot do without consistent and clear communication with all concerned.
