Luxurious long-ripened salami with white mold comes from the nature of the Hradec Králové region . In the solid elastic "body" with the upper mold, the mosaic of meat is clearly visible on the cut. The salami has a delicate and balanced taste with a spicy finish and is hand-bound.

Recently, Count Francesco Kinský dal Borgo paid us a visit and we arranged with him a delivery of 50 pieces of the above-mentioned salami delicacy, which he produces with his cousin Carl. So if these luxury sausages have appealed to you, definitely do not delay ordering them. No one else in the Czech Republic does that!

The salami is made according to a traditional Italian recipe , so it matures nicely in peace for 45 days at carefully controlled humidity.

He, Count Francesco and Carlo, was born in Pisa and grew up in the Tuscan countryside. However, the fallow deer itself comes from the vast Czech forests, in which the Kinský family has been farming for hundreds of years. Otherwise, the Kinští family is an old Czech knightly and later a lordly, count and princely family, which dates back to the beginning of the 13th century. They currently live in the Czech Republic, Austria and other countries. Francesco and Carlo have been living in Chlumec nad Cidlinou since 2012, where they take care of the family property together.
